Fruit Leather, Köme & Walnut Sausage

The problem

Fruit leather and walnut sausage dry slowly in humid air; the surface hardens while the inside stays moist, the colour darkens and the risk of mould and souring rises. Seasonal production cannot keep up with orders.

The solution

The Mareşal machine removes moisture from the air of the closed room and circulates dry air between strings and trays. Fruit leather dries evenly on the tray, walnut sausage dries through to the core on the string in the same time; colour and aroma are preserved and production runs all year. In the hygienic room there is no contact with dust or insects.

Room layout

• Leave an air corridor between strings; set rack rows parallel to the machine’s airflow.
• Insulate the room so it takes no outside air; set the target humidity on the panel.
